Salmon with Greek rice salad

Whip up a quick and tasty dinner with this shortcut salmon and Greek rice salad recipe!
Ingredients:
  • 2 x 270g packets frozen Atlantic salmon provencale
  • 450g packet microwave long grain white rice
  • 200g mini roma tomatoes, halved lengthways
  • 2 Lebanese cucumbers, diced
  • 125.00 ml fresh flat-leaf parsley leaves, chopped
  • 1/2 small red onion, thinly sliced
  • 165.00 ml crumbled Greek feta cheese
  • 42.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • Lemon wedges, to serve
Instructions:
  • Prepare the fish according to the instructions on the packet.
  • Cook the rice as per the package instructions. Transfer the cooked rice to a large bowl and fluff up the grains with a fork. Let it cool for 5 minutes. Add the tomato, cucumber, parsley, onion, and feta to the bowl. Drizzle with lemon juice and oil, then sprinkle with salt and pepper. Mix everything together gently.
  • Present the salmon alongside a delicious rice salad and garnish with lemon wedges.
