Protein-packed and delicious, perfect for a healthy diet.
Ingredients:
  • 2 slices wholegrain bread, crusts removed
  • 50g pine nuts
  • 4 skinless salmon fillets
  • Salt & freshly ground pepper
  • Olive oil spray
  • 100g green beans, trimmed
  • 1 bunch Dutch carrots, trimmed, peeled
  • Zest of 1 lemon
  • 62.50 ml shredded fresh mint
  • Lemon wedges, to serve
Instructions:
  • Add the bread to a food processor and pulse until coarse crumbs are achieved.
  • Toast pine nuts in a large frying pan over medium heat until lightly browned. Add breadcrumbs and cook until golden. Transfer mixture to a bowl.
  • Drizzle salmon with oil and generously season with salt and pepper. Sear in a hot pan for 3-4 minutes on each side until perfectly cooked.
  • Simmer beans and carrots in boiling water for 3-4 minutes until tender-crisp.
  • Combine the refreshing lemon zest and fragrant mint with the breadcrumbs. Plate the vegetables, then add the salmon on top. Finish with the breadcrumb mixture and serve with lemon wedges.
