Ingredients:
  • 2 tablespoons butter
  • 1.5 pounds skinless, boneless chicken breasts, cut into 1-inch chunks
  • 1 medium green bell pepper, diced
  • 1 (16 ounce) jar salsa verde
  • 1 (12 ounce) package frozen cauliflower rice
  • 0.25 cup chicken broth
Instructions:
  • In a Dutch oven or large pot over medium-high heat, melt butter. Add chicken and cook, stirring occasionally, until golden brown all over, about 7 to 10 minutes.
  • Add vibrant bell peppers to the sizzling pan and cook until perfectly tender-crisp, stirring occasionally, for approximately 3 minutes.
