Salsafied Chicken and Rice

Easy one-skillet meal with chicken, salsa, and instant rice topped with melted Cheddar - delicious!
Ingredients:
1tablespoonolive oil
1poundskinless, boneless chicken breast halves - cubed
0.25 teaspoonsalt
0.25 teaspoongroundblack pepper
1 (14.5 ounce) canchicken broth
1 (8 ounce) jarsalsa
2cups instant rice
8ounces shreddedCheddar cheese
Instructions:
In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper and cook in the hot oil until juices run clear, for 5 to 7 minutes, stirring occasionally.
Pour in the savory broth and zesty salsa, bringing it to a bubbling boil. Turn off the heat and gently fold in the instant rice. Finally, generously sprinkle the delectable Cheddar cheese over the top.
Cover the skillet and allow the rice to cook until tender, approximately 5 minutes.
