Easy one-skillet meal with chicken, salsa, and instant rice topped with melted Cheddar - delicious!
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound skinless, boneless chicken breast halves - cubed
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 (14.5 ounce) can chicken broth
  • 1 (8 ounce) jar salsa
  • 2 cups instant rice
  • 8 ounces shredded Cheddar cheese
Instructions:
  • In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper and cook in the hot oil until juices run clear, for 5 to 7 minutes, stirring occasionally.
  • Pour in the savory broth and zesty salsa, bringing it to a bubbling boil. Turn off the heat and gently fold in the instant rice. Finally, generously sprinkle the delectable Cheddar cheese over the top.
  • Cover the skillet and allow the rice to cook until tender, approximately 5 minutes.
