Ingredients:
  • 1kg green king prawns, peeled, deveined, tails intact
  • 1 eggwhite, lightly beaten
  • 9.60 gm salt
  • 97.50 gm cornflour
  • 10.00 gm piri piri seasoning
  • oil, for deep-frying
  • lime wedges, to serve
Instructions:
  • Mix prawns with egg white until coated evenly. Chill in the refrigerator, covered, for 10 minutes.
  • First, preheat your oven to a perfect 180°C. Then, delicately sift together the flour, salt, and cornflour, followed by adding your desired seasoning for an extra touch of flavor.
  • Fill the wok one-third full with oil and heat over medium-high heat until a piece of bread browns in 15 seconds.
  • Pat dry prawns. Coat in flour mixture, shaking off excess. Cook in batches for 1-2 minutes until fully cooked. Keep warm in oven as you cook the rest. Serve with lime wedges.
