Spiced, savory meat pastries - crispy or baked.
Ingredients:
  • 80ml (1/3 cup) olive oil
  • 2 small onions, finely chopped
  • 1.25 gm ground ginger
  • 1/2 tsp ground allspice
  • 500g minced lamb
  • 44.40 gm tomato paste
  • 50g (1/3 cup) pine nuts, roasted
  • 62.50 ml chopped coriander
  • 40.00 ml pomegranate molasses or juice of 1/2 lemon
  • 375g packet fresh filo pastry
  • 100g butter, melted
Instructions:
  • In a frying pan over medium heat, warm the olive oil. Sauté onions for 10 minutes until soft. Stir in cinnamon, ginger, and allspice; cook for 2 minutes until fragrant. Add the meat and cook, breaking it up until browned. Mix in tomato paste, pine nuts, coriander, and pomegranate molasses. Season with sea salt and black pepper. Let cool.
  • Preheat the oven to 180°C. Layer two sheets of filo at a time, brushing each with melted butter. Cut into 3 strips, stack them, then place a tablespoon of filling near one end of each strip. Fold into a triangle shape, wrapping the pastry around the filling. Brush with butter and bake for 20 minutes until golden. Serve warm or at room temperature.
