Broccoli Cheddar soup ready in under an hour, customizable to your liking.
Ingredients:
  • 3 tablespoons butter
  • 0.25 small onion, chopped
  • 2 tablespoons all-purpose flour
  • 1 cup half-and-half
  • 1.5 cups chicken broth
  • 2 cups chopped broccoli
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1.25 cups shredded mild Cheddar cheese
Instructions:
  • In a stock pot, melt butter over medium-high heat. Cook onions until tender, about 3-4 minutes. Whisk in flour and cook until mixture turns golden brown, around 5 minutes. Gradually pour in half-and-half, stirring until smooth. Add chicken broth, then season with salt and pepper.
  • Simmer the mixture on medium-low heat until thickened, for about 10 minutes. Stir in broccoli, carrots, and celery and continue to simmer until vegetables are tender yet crisp, for about 20 minutes.
  • Turn the heat down to low and sprinkle in the Cheddar cheese. Stir occasionally as the cheese melts into the soup, which should take around 5 minutes.
