Succulent ground beef infused with gentle spices and smoky liquid flavor, perfect for a satisfying snack with cheese and crackers.
Ingredients:
  • 2 pounds ground beef
  • 2 tablespoons mustard seed
  • 2 tablespoons liquid smoke flavoring
  • 2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
  • 1 tablespoon garlic powder
  • 1 teaspoon coarse ground black pepper
Instructions:
  • Mix ground beef, mustard seed, liquid smoke, curing salt, garlic powder, and pepper by hand in a large bowl until combined. Shape mixture into two equal logs and wrap them in aluminum foil with the shiny side facing the meat. Refrigerate for 24 hours.
  • Heat your oven to 325°F (165°C).
  • Poke small holes through the aluminum foil on the bottom of each log using a toothpick. Then place the logs on a broiler rack and fill the broiler pan with 1/2 inch of water.
  • Place in the preheated oven for 90 minutes. Allow it to cool for 30 minutes before chilling in the refrigerator for about 12 hours until fully set. Unwrap and serve.
