Delicious oat cake infused with nutmeg, topped with irresistible broiled coconut icing - pure perfection!
Ingredients:
  • 1 cup rolled oats
  • 1.25 cups boiling water
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 0.5 cup shortening
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 6 tablespoons melted butter
  • 0.5 cup packed brown sugar
  • 2 tablespoons heavy cream
  • 0.66666668653488 cup flaked coconut
  • 0.5 teaspoon vanilla extract
Instructions:
  • Combine oats and boiling water in a small bowl, allowing them to soak for 20 minutes.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then grease an 8x8 inch baking pan.
  • Combine white sugar, 1 cup brown sugar, and shortening in a medium bowl until smooth. Add eggs one at a time. Sift in flour, baking soda, salt, and nutmeg; mix until just moistened. Fold in soaked oats. Spread evenly in prepared pan.
  • Bake in the preheated oven for 35-40 minutes until a toothpick inserted into the cake comes out clean. Then switch the oven to the broil setting and allow it to heat up.
  • Combine melted butter, 1/2 cup brown sugar, heavy cream, coconut, and vanilla in a small bowl. Evenly spread the mixture over the cake and broil briefly until the coconut turns golden brown.
