Orzo pilaf with onion, garlic, spinach, and feta - a flavorful and vibrant side dish.
Ingredients:
  • 2 tablespoons butter
  • 0.5 cup orzo pasta
  • 0.5 cup diced onion
  • 2 cups chicken broth
  • 0.5 cup white rice
  • 1 cup chopped spinach
  • 0.5 cup chopped Bulgarian feta cheese
Instructions:
  • In a skillet, melt butter over medium-low heat. Add orzo and cook, stirring occasionally, until golden brown, 3 to 5 minutes. Stir in onion and cook until translucent, 5 to 10 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Pour the broth and rice into the orzo-onion mixture, then bring it all to a boil. Lower the heat to medium-low, cover the skillet, and let it simmer until the rice is tender and the liquid is absorbed, which should take about 20 to 25 minutes.
  • Stir in fresh spinach and creamy feta off the heat. Cover and rest until the spinach wilts and feta melts, around 5 minutes. Gently fluff with a fork before serving.
