Cajun chicken with creamy pasta, mushrooms, and andouille sausage cooked in Instant Pot for a comforting meal.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning, divided
  • 1 pound thinly sliced chicken breasts
  • 1 andouille sausage, diced
  • 0.5 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 0.75 cup heavy whipping cream
  • 1 teaspoon hot sauce
  • 1.5 cups penne pasta
  • 1 cup freshly grated Parmesan cheese
  • 0.25 cup fresh or frozen green or red pepper strips
  • 1 teaspoon chopped fresh parsley
Instructions:
  • Preheat a multi-functional pressure cooker, like an Instant Pot, using the Saute function. Add butter and oil and let the butter melt.
  • Season both sides of the chicken breasts with 2 teaspoons Cajun seasoning. Brown the chicken in a hot Instant Pot for 2 minutes on each side. Transfer the chicken to a plate. Add andouille sausage, mushrooms, and garlic to the pot and sauté for about 2 minutes. Cancel the Saute mode.
  • Combine chicken broth, whipping cream, and hot sauce in the pot. Stir in penne pasta. Place chicken breasts on top of the pasta. Seal the lid, set to high pressure for 12 minutes, and allow pressure to build for 10 to 15 minutes.
  • Follow manufacturer's instructions to naturally release pressure for approximately 20 minutes. Then, carefully use the quick-release method to release any remaining pressure for about 5 minutes. Finally, unlock and remove the lid.
  • Transfer the chicken breasts to a cutting board and dice them into bite-sized pieces.
  • Blend the Parmesan cheese into the pasta sauce in the Instant Pot® until it melts. Put the chicken back into the pot and mix well. Add bell pepper and stir gently. Let the residual heat in the pot cook the peppers. Enjoy your dish immediately with a sprinkle of parsley on top.
