Whip up a delicious warm lentil salad in no time - perfect as a side or a hearty main dish with bread.
Ingredients:
  • 1 cup dry lentils
  • 1 cup chicken broth
  • water to cover
  • 2 tablespoons unsalted butter
  • 1 medium onion, chopped
  • 1 teaspoon minced garlic
  • 1 (14 ounce) can diced tomatoes, drained
  • 1 tablespoon balsamic vinegar
Instructions:
  • In a pot, simmer lentils and chicken broth with just enough water to cover. Cook gently for about 25 minutes until lentils are tender but still intact, adding more water as needed to keep them submerged.
  • In a saucepan over medium heat, melt butter until bubbling. Cook onion until softened and golden, around 5 minutes. Stir in garlic and cook for 30 seconds. Add lentils with their liquid and tomatoes, folding gently. Season with salt, drizzle in balsamic vinegar, and stir lightly. Serve while warm.
