Sarah's Roasted Red Pepper Dip

Spicy roasted red pepper dip; perfect with veggies or chips.
Ingredients:
  • 2 large red bell peppers
  • 2 tablespoons tomato paste
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 2 teaspoons vinegar
  • 1 clove garlic
  • 0.125 teaspoon cayenne pepper
Instructions:
  • Preheat oven on the broil setting.
  • Arrange bell peppers on a baking sheet and broil on the top oven rack, turning with tongs until each side is blackened. Transfer the blackened peppers to a loosely tied plastic bag for 15 minutes to steam. Remove stems, peel, discard cores and seeds, then slice peppers into wide strips.
  • Combine peppers, tomato paste, mayonnaise, sour cream, vinegar, garlic, and cayenne pepper in a food processor. Pulse until almost smooth, about 7-8 times. Season with salt to taste.
  • Chill until you're ready to enjoy.
