Sweet potato pie in graham cracker crust with marshmallows. Make ahead, add marshmallows before serving!
Ingredients:
  • 1.5 cups crushed graham crackers
  • 2 tablespoons brown sugar
  • 0.5 cup butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 1 (29 ounce) can sweet potatoes, drained and mashed
  • 0.25 cup packed brown sugar
  • 0.25 cup light cream
  • 2 eggs, lightly beaten
  • 2 tablespoons vanilla
  • 1 (10.5 ounce) package miniature marshmallows
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C, gas mark 4) and give a gentle grease to a 9 inch springform pan.
  • Combine graham crackers, cinnamon, brown sugar, and butter in a bowl, then press into the springform pan to create a crust. Bake in the preheated oven for 10 minutes until lightly browned.
  • Combine cream cheese, sweet potatoes, 1/4 cup brown sugar, light cream, eggs, and vanilla in a large bowl. Spread the mixture into the baked crust.
  • During the last 10 minutes of baking the pie in a preheated oven for 1 hour, top it with marshmallows to melt.
