Elevate Sarah's favorite comfort meal with premium sausages, ripe tomatoes, Parmesan, and fresh basil for a gourmet twist on a classic dish.
Ingredients:
  • 1 onion
  • 1 carrot
  • 1 stick of celery
  • 1 bunch of fresh basil (30g)
  • olive oil
  • 4 quality Italian sausages (250g in total)
  • 1 heaped teaspoon fennel seeds
  • 1 teaspoon dried oregano ideally the flowering kind
  • 1 pinch of dried chilli flakes
  • 1 sprig of fresh rosemary
  • 4 cloves of garlic
  • 2 tablespoons balsamic vinegar
  • 2 x 400 g tins of quality plum tomatoes
  • 300 g dried penne
  • 40 g Parmesan cheese plus extra to serve
Instructions:
  • Peel and finely chop the onion, carrot, and celery along with basil stalks (keeping the leaves aside). Heat a large pan with 2 tablespoons of olive oil, then squeeze the sausagemeat out of the skins into the pan and break it up with a wooden spoon. Add fennel seeds, oregano, and chilli flakes, along with rosemary. Stir in the chopped vegetables and basil stalks, then grate in the garlic. Cook until softened, about 10 minutes. Pour in balsamic vinegar and let it reduce slightly. Crush tomatoes by hand, add water from a tin, and the larger basil leaves. Simmer for about 20 minutes until thickened. Cook pasta according to package instructions. Toss drained pasta in the sausage sauce, adding some reserved cooking water if needed. Season with salt and pepper. Finish with Parmesan, basil leaves, and a drizzle of extra virgin olive oil before serving with rocket and extra Parmesan.
