Turkish Sarma: Cabbage leaves filled with seasoned rice and 3 meats, steamed over sauerkraut.
Ingredients:
  • 1 large head cabbage
  • 1 pound lean ground beef
  • 0.5 pound ground pork
  • 0.5 pound ground ham
  • 1 cup uncooked long-grain white rice
  • 1 onion, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon coarse ground black pepper
  • 0.5 teaspoon garlic powder
  • 1 pound sauerkraut
  • 1 cup tomato juice
  • water to cover
Instructions:
  • Separate the cabbage leaves from the head.
  • Combine beef, pork, ham, uncooked rice, onion, egg, salt, pepper, and garlic powder in a bowl until well mixed. Shape 1/2 cup of the mixture into oblong balls and wrap each ball with a cabbage leaf.
  • Spread a generous layer of tangy sauerkraut in a large pot. Place the cabbage rolls seam-side down on top. Cover the rolls with tomato juice and enough water to fully submerge them. Bring to a boil, then lower the heat and simmer gently for around 3 hours, remembering to top up with more water as needed.
