Delicious grilled pork skewers marinated in flavorful satay sauce, topped with zesty lime juice.
Ingredients:
1tablespoonground coriander
1tablespooncumin seed
0.75 teaspoonsalt
0.5 teaspoonvegetable oil
0.125 teaspoongroundblack pepper
3pounds pork butt roast, cut into 1 1/2 inch cubes
0.5 cupslicedonions
0.33333334326744 cupsoy sauce
1tablespoonbrown sugar
0.25 teaspoonground ginger
3limes, cut into wedges
Instructions:
Combine coriander, cumin, salt, oil, and pepper in a glass bowl. Add pork cubes and coat them well. Rest for 20 minutes. Mix in onions, soy sauce, brown sugar, and ginger. Blend well, cover, and refrigerate for at least 1 hour, preferably overnight.
Preheat the outdoor grill to high heat and lightly oil the grate. Thread pork cubes onto eight skewers, omitting the onions.
Grill the dish on high heat, brushing it often with the extra marinade. Rotate occasionally until fully cooked, approximately 15 minutes. Present with a refreshing sprinkle of lime juice. Dispose of any leftover marinade.
