Sausage antipasto pasta

Whip up this tasty dinner to beat the midweek blues.
Ingredients:
  • 375g dried tortiglioni pasta
  • Olive oil cooking spray
  • 500g beef sausage
  • 1 medium brown onion, halved, thinly sliced
  • 280g jar chargrilled antipasto vegetables, drained
  • 550.00 gm tomato pasta sauce
  • 125.00 ml chopped fresh basil leaves
  • Shaved parmesan cheese, to serve
  • Small fresh basil leaves, to serve
Instructions:
  • Boil pasta in salted water as per package instructions until tender, then drain.
  • In a generously oiled large frying pan over medium-high heat, cook sausages for 4 to 5 minutes until browned and cooked through. Transfer to a chopping board and slice thickly on a diagonal.
  • Sauté chopped onion in a skillet until softened, about 3 to 4 minutes. Stir in antipasto vegetables, pasta sauce, and sausage. Bring to a boil, then simmer over low heat for 2 minutes until everything is heated through. Add fresh basil and cooked pasta, toss gently to combine. Serve topped with Parmesan cheese and more fresh basil leaves. Enjoy!
