Sausages with tomato relish & sweet potato

Sunday dinner: Quality sausages with sweet potato chips and onion relish - perfect harmony!
Ingredients:
  • 1 large (about 800g) orange sweet potato (kumara), peeled, cut into 1cm batons
  • 36.40 gm olive oil
  • 8 spring onion tops, thinly sliced
  • 1 red onion, thinly sliced
  • 180g (2/3 cup) green tomato relish (MasterFoods brand)
  • 8 old-english beef sausages
Instructions:
  • Preheat oven to 220°C and grill to medium-high. Line a baking tray with foil. Place sweet potato on the tray, drizzle with 1 tablespoon oil, and toss gently. Bake for 20 minutes until crisp. Remove from oven and add spring onion, tossing to combine.
  • Heat the rest of the oil in a medium frying pan over medium-high heat. Sauté the red onion for 7 minutes until nicely browned. Stir in the relish and cook for 1 more minute until heated through.
  • Grill sausages 6cm from heat for 3 minutes per side or until cooked. Serve with a dollop of tomato relish and sweet potato.
