Sauteed leek & bacon

Salty bacon enhances leeks.
Ingredients:
  • 50g butter
  • 1 brown onion, halved, thinly sliced
  • 200g bacon rashers, rind and excess fat removed, roughly chopped
  • 6 (about 1.5kg) leeks, halved lengthways, washed, dried, cut into 5cm lengths
  • Salt & freshly ground black pepper
Instructions:
  • In a large, deep frying pan over medium heat, melt butter until foamy. Cook onions for 2 minutes until softened. Stir in bacon and cook for 5 minutes until it begins to brown. Add leeks and cook for 2 minutes until browned, stirring occasionally.
  • - Lower the heat. Cut a piece of non-stick baking paper to fit over the frying pan. Crumple the paper, dampen with cold water, and place over the leek mixture. Cook for 35-40 minutes until leek is soft. Remove from heat, season with salt and pepper, and serve with beef wellingtons.
