Brine pork chops in a flavorful garlic marinade for juicy and tender results.
Ingredients:
  • 1 tablespoon whole black peppercorns
  • 0.75 cup kosher salt
  • 2 tablespoons brown sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon ground mustard
  • 1 cup balsamic vinegar
  • 0.5 cup olive oil
  • 1 tablespoon lemon juice
  • 2 cubes ice cubes
  • 2 (8 ounce) boneless pork chops
  • 1 teaspoon ground black pepper
  • 0.25 teaspoon ground red chile pepper
Instructions:
  • Crush half of the peppercorns. Combine them with salt, sugar, garlic, and mustard in boiling water. Stir until all dry ingredients dissolve. Gradually mix in vinegar, olive oil, and lemon juice until well combined. Transfer the mixture into a shallow glass or ceramic dish.
  • If the brine is hotter than lukewarm, incorporate ice. Add pork chops, cover, and let marinate at room temperature for 2 hours, turning occasionally.
  • In a frying pan over medium-high heat, sauté olive oil, garlic, pepper, and chile powder. Add pork chops from the brine and sear for 2 minutes on each side. Then, lower the heat, cover, and cook until pork reaches an internal temperature of 160°F (71°C), checking every 5 minutes, for about 10 to 15 minutes more.
