Savory Lemon Dill Parmesan Scones

Fluffy lemon-dill scones with a cheesy Parmesan topping, perfect for any meal.
Ingredients:
  • 0.5 teaspoon lemon juice
  • 0.5 cup soy milk
  • 2 cups all-purpose flour
  • 5 tablespoons lemon juice, divided
  • 1 tablespoon white sugar
  • 2.5 teaspoons baking powder
  • 2 teaspoons dried dill
  • 0.75 teaspoon salt
  • 0.5 cup chilled unsalted butter, cut into pieces
  • 1 egg
  • 1 egg, beaten
  • 1 teaspoon ground black pepper
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and prepare a baking sheet with a cozy layer of parchment paper.
  • Mix 1/2 teaspoon of lemon juice into soy milk in a small bowl to create mock buttermilk. Allow it to rest until it curdles, for 5 to 10 minutes.
  • Combine flour, 3 tablespoons of zesty lemon juice, sugar, baking powder, dill, and salt in a large bowl. Use a fork to blend everything together. Add butter and use a pastry blender until the dough begins to clump.
  • Combine mock buttermilk, remaining 2 tablespoons lemon juice, and egg in a bowl, whisking until well blended. Pour mixture over dough and gently mix with a fork until just combined.
  • Sprinkle flour on the work surface. Place the dough on it and shape it into an 8-inch disc. Fold it in half and gently flatten it back into a disc. Repeat this folding and flattening process 3 more times to create airy layers in the dough.
  • Place the dough disc on the baking sheet and generously brush it with beaten egg. Cut it into 8 wedges and gently separate them so they are evenly spaced.
  • Bake in the oven until lightly golden, approximately 10 minutes.
  • Take the scones out of the oven and generously sprinkle the Parmesan cheese and black pepper mixture on top of each scone.
  • Continue baking in the oven until the top turns a luscious golden brown and the edges appear dry, for another 10 minutes.
