Savory-sweet rosemary and brown sugar muffins, perfect for any meal.
Ingredients:
  • 2 eggs
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar replacement (such as Splenda® Brown Sugar Blend)
  • 0.75 cup olive oil
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 cups pureed cooked butternut squash
  • 1 cup old-fashioned oats
Instructions:
  • Preheat the oven to 325°F (165°C) while you generously grease 24 muffin cups or line them with paper liners.
  • In a large bowl, whisk together eggs, flour, brown sugar replacement, olive oil, baking soda, and salt until smooth. Mix in squash, oats, and rosemary until well combined. Spoon batter into muffin cups.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
