Festive Christmas tree puff pastry with goat cheese and sun-dried tomato pesto - a delightful holiday appetizer.
Ingredients:
  • 2 tablespoons sun-dried tomato pesto
  • 2 tablespoons soft goat cheese (such as Chavrie®)
  • 2 sheets puff pastry
  • 2 tablespoons freshly grated Pecorino-Romano cheese, divided
  • 1 egg, beaten
  • 0.5 teaspoon dried oregano
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet with a cozy layer of parchment paper.
  • Mix the sun-dried tomato pesto and goat cheese in a small bowl until fully combined.
  • Spread out the puff pastry on the baking sheet. Trim 2 strips from the bottom to make a tree trunk, then cut diagonally to shape a triangle, discarding excess pastry on the sides.
  • Smooth a delicate coat of the pesto mixture evenly across the entire pastry, extending it to the edges. Sprinkle 1 tablespoon of Pecorino-Romano cheese on top.
  • Carefully roll the second puff pastry sheet up and place it at the tip of the triangle. Gently unroll it towards the bottom, pressing lightly. Trim the sides to match the first triangle and remove any excess pastry.
  • Cut 2/3-inch thick branches into the sides of the triangle, leaving a space lengthwise in the center from the trunk to the tip. Twist the branches away from you, aiming for 2 turns on the lower branches. Keep twisting away from you as you work your way up the tree.
  • Coat the whole tree with beaten egg, then generously sprinkle with the remaining 1 tablespoon of Pecorino-Romano cheese and dried oregano.
  • Place in the preheated oven and bake until beautifully golden for approximately 20 minutes. Allow to cool on the baking sheet before serving.
