"Upgrade classic hummus with vibrant pumpkin puree, perfect with veggies and pita bread!"
Ingredients:
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 3 cloves garlic
  • 0.75 teaspoon salt
  • 2 (15 ounce) cans garbanzo beans, drained
  • 2 teaspoons extra-virgin olive oil
  • 1 (15 ounce) can pumpkin puree
  • 0.5 teaspoon cayenne pepper
  • 0.25 cup toasted pumpkin seed kernels, or more to taste
  • 1 pinch paprika
Instructions:
  • In a food processor or blender, blend lemon juice, tahini, garlic, and salt until smooth. Add garbanzo beans and olive oil; blend until creamy. Mix in pumpkin, cumin, and cayenne pepper until fully combined. Transfer hummus to a lidded container and chill in the refrigerator for at least 2 hours.
  • Gently incorporate pumpkin seeds into the creamy hummus, then sprinkle with a fragrant hint of paprika for a finishing touch.
