Tropical gelatin salad with citrus, pineapple, marshmallows, custard, bananas, and coconut.
Ingredients:
  • 1 (3 ounce) package lemon flavored Jell-O® mix
  • 1 (3 ounce) package orange flavored Jell-O® mix
  • 2 cups boiling water
  • 1 (20 ounce) can crushed pineapple, drained
  • 1 (16 ounce) package miniature marshmallows
  • 2 cups pineapple juice
  • 2 eggs, lightly beaten
  • 5 tablespoons all-purpose flour
  • 3 bananas, sliced
  • 2 (1.3 ounce) envelopes whipped topping mix
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded coconut, toasted
Instructions:
  • Combine zesty lemon and vibrant orange gelatin powders in a large bowl. Pour in boiling water and mix until powders are fully dissolved. Gently fold in juicy pineapple and fluffy marshmallows. Chill in the refrigerator until set.
  • Once the gelatin mixture is chilling, combine pineapple juice, sugar, eggs, and flour in a medium saucepan. Cook over medium heat until thick while stirring constantly to avoid scorching. Remove from heat, cool, then spread over the set gelatin mixture.
  • Prevent browning by gently coating sliced bananas with fresh lemon juice. Layer the beautifully glazed bananas over the luscious custard mixture.
  • Make the whipped topping mix following the instructions on the package, then incorporate cream cheese until creamy. Spread over the bananas and sprinkle toasted coconut on top.
  • Refrigerate salad for 2 to 4 hours before enjoying.
