Citrus juices marinate scallops in this refreshing ceviche, best prepared ahead for a flavorful gourmet starter.
Ingredients:
  • 0.5 pound fresh scallops, diced
  • 2 clementines - peeled, segmented, and diced
  • 1 Roma tomato, diced
  • 0.5 small red onion
  • 2 scallions, sliced
  • 0.5 lemon, juiced
  • 0.5 lime, juiced
  • 1 tablespoon chopped cilantro, or to taste
  • 0.5 teaspoon olive oil
  • sea salt to taste
Instructions:
  • In a large bowl, mix together scallops, clementines, tomato, red onion, scallions, lemon juice, lime juice, garlic, cilantro, and olive oil. Add salt to taste. Chill in the refrigerator for about 2 hours, stirring occasionally to blend the flavors.
