Succulent chicken breast cooked in savory Italian tomato sauce with mushrooms, served over hot egg noodles and topped with Parmesan cheese.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound skinless, boneless chicken breast halves, cubed
  • 1 small onion, diced
  • 0.5 green bell pepper, diced
  • 2 cups sliced fresh mushrooms
  • 1 (28 ounce) can Italian-style crushed tomatoes
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • 1 (8 ounce) package egg noodles
Instructions:
  • In a large skillet over medium heat, sizzle chicken, onion, green pepper, mushrooms, and garlic until chicken is cooked through, about 10 to 15 minutes. Add crushed tomatoes, parsley, salt, pepper, Italian seasoning, and basil. Bring to a boil, then lower the heat, cover, and simmer for 30 minutes.
  • As the chicken simmers, boil a large pot of lightly salted water over high heat. Add the egg noodles once it's boiling, stirring well. Boil uncovered for about 5 minutes until noodles are al dente. Drain in a colander in the sink.
  • Plate the chicken cacciatore over the steaming cooked noodles, then generously sprinkle with Parmesan cheese.
