Ingredients:
2pounds potatoes, unpeeled
0.5 small onion, diced
0.5 teaspoonprepared yellow mustard
1cupvegetable stock
3tablespoons vinegar, or more to taste
2tablespoons vegetable oil
Instructions:
In a large pot, boil potatoes in salted water until tender, approximately 20 minutes. Drain and let them cool slightly. Peel, slice, and combine with onions in a bowl. Add mustard, salt, and black pepper, and mix well.
Bring the vegetable stock to a boil then pour it over the potato mixture, stirring to combine. Add the vinegar and let it rest for 10 minutes. Finally, stir in the vegetable oil and season with salt and black pepper to taste.
