Garlic butter clams in white wine broth, served over pasta with crusty bread.
Ingredients:
  • 50 small clams in shell, scrubbed
  • 2 tablespoons extra virgin olive oil
  • 1 cup white wine
  • 2 tablespoons butter
  • 0.5 cup chopped fresh parsley
Instructions:
  • Prepare all ingredients.
  • Rinse clams thoroughly to eliminate any impurities.
  • In a large pot over medium heat, gently sauté garlic in hot oil until tender, approximately 1 minute.
  • Pour the fragrant white wine into the pan, then watch as it bubbles and fills your kitchen with its delightful aroma. Allow it to gently simmer until it reduces by half, intensifying the flavors in the process.
  • Add clams to the pot, cover, and steam until they start to open. Add butter, cover, and cook until most or all clams open. Discard any unopened clams.
  • Divide the clams and broth evenly between two large bowls. Garnish with chopped parsley and enjoy.
