Elevate eggs with asparagus, mushrooms, and faux crab meat for a gourmet dish ready in just 20 minutes!
Ingredients:
  • 1 teaspoon olive or vegetable oil
  • 4 oz fresh asparagus, cut into 2-inch pieces (about 1 cup)
  • 3/4 cup thinly sliced fresh mushrooms
  • 1/2 cup chopped imitation crabmeat
  • 3/4 cup cheese-and-chive egg product
  • 1/4 cup shredded mozzarella cheese (1 oz)
Instructions:
  • Prepare a 10-inch nonstick skillet by brushing the bottom and sides with oil. Heat the skillet over medium-low heat. Add asparagus and mushrooms and cook for 3 to 4 minutes, stirring occasionally, until the asparagus is crisp-tender. Reduce heat to medium-low, then stir in the crabmeat and cook until heated through.
  • Evenly spread mixture in skillet and gently pour egg product over it without mixing. Cook for 6 to 8 minutes until egg is nearly set. Sprinkle with cheese.
  • Preheat broil setting on the oven. Safely cover skillet handle with foil. Broil frittata 4 to 6 inches from heat for 1 to 2 minutes until cheese is melted and eggs are set. Cut in half and serve hot.
