Savory seafood gumbo with oysters, crab, and shrimp in a rich, spicy broth with aromatic veggies and dark roux.
Ingredients:
  • 0.5 teaspoon ground cayenne pepper
  • 0.5 teaspoon ground white pepper
  • 1.5 teaspoons paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano
  • 1 bay leaf, crushed
  • 0.75 cup vegetable oil
  • 2 cups chopped celery
  • 2 cups chopped onion
  • 2 cups chopped green bell pepper
  • 1 teaspoon minced garlic
  • 3 tablespoons file powder
  • 2 teaspoons hot pepper sauce
  • 1.5 cups tomato sauce
  • 7 cups fish stock
  • 2 cups shucked oysters
  • 1 cup crabmeat
  • 1 pound small shrimp - peeled and deveined, shells reserved for stock
Instructions:
  • Mix the red, white, and black peppers with paprika, thyme, oregano, bay leaf, and salt; set aside.
  • In a large heavy pot, warm oil over medium heat. Add onions, celery, and green pepper, then increase heat to high. Stir in garlic, file, hot sauce, and the pepper-herb mixture. Cook for 5 minutes, stirring constantly.
  • Pour in the tomato sauce and stir while letting it thicken over high heat. Pour in the fish stock and bring to a boil. Lower the heat, simmer for an hour, stirring occasionally.
  • Just before serving, gently add the shrimp, oysters, and crabmeat. Cover the dish and let it sit for 5 minutes. Turn off the heat and allow it to rest for an additional 10 minutes. Serve and enjoy!
