Create a delicious seafood medley in a savory hot pot.
Ingredients:
  • 18.20 gm olive oil
  • 4 medium potatoes, cubed
  • 1 brown onion, quartered
  • 1 garlic clove, crushed
  • 1 tsp mixed dried herbs
  • 1 800g can tomatoes
  • 33.30 gm tomato paste
  • 500mls (2 cups) water
  • 125mls (1/2 cup) dry white wine
  • 3 medium zucchini, sliced
  • 250g green beans, quartered
  • 500g boneless white fish fillets (like ling), cut in 4cm cubes
  • 250g green prawns, shelled and deveined (with heads and tails left intact if desired)
  • 42.00 gm fresh lemon juice
  • 125.00 ml chopped fresh basil
Instructions:
  • In a large saucepan over medium heat, warm the oil until shimmering. Add the potatoes, onion, garlic, and dried herbs, stirring occasionally for 5 minutes until fragrant and golden.
  • Chop the tomatoes and their juices, then combine with tomato paste, water, and wine. Bring to a boil, then reduce heat and simmer for 10 minutes. Stir in zucchini, beans, and fish, simmer for 5 minutes. Lastly, add prawns and cook for 3 minutes until seafood is cooked through. Finish by stirring in lemon juice and half of the basil.
  • Garnish with the remaining basil before serving.
