Seafood Paella

Ready in 30 minutes! Flavorful paella with mussels, clams, rice, and Progresso® chicken broth with peas.
Ingredients:
  • 10 fresh mussels in shells
  • 10 fresh clams in shells
  • 3 cups Progresso™ chicken broth (from 32-oz carton)
  • 0.75 gram saffron
  • 1/4 cup olive oil
  • 1/2 cup finely chopped onion
  • 4 cloves garlic, finely chopped
  • 1 1/2 cups uncooked converted white rice, rinsed
  • 1/2 lb uncooked jumbo shrimp in shells (about 6)
  • 1 box (9 oz) frozen baby sweet peas
  • 1 sprig Italian (flat-leaf) parsley
  • 1 teaspoon salt
  • 1/2 cup sliced roasted red bell peppers (from a jar)
Instructions:
  • Inspect mussels and clams, discarding any broken or open ones. Scrub them in cold water to remove barnacles with a dull paring knife, and pluck out mussels' beards. Place them in a large container, cover with cool water, agitate to remove sand, discard water, and repeat until water runs clear; then drain.
  • Microwave 1/2 cup of chicken broth in a small microwavable bowl on High for 15 to 20 seconds until hot. Steep saffron in the hot broth for about 5 minutes until the liquid turns dark yellow. Set aside and keep the saffron for later use.
  • In a large pan, heat oil over medium-high heat. Sauté onion, garlic, and rice for 1 to 2 minutes until onions are soft. Add shrimp, mussels, clams, peas, parsley, remaining chicken broth, salt, and saffron broth.
  • Bring everything to a boil over medium-high heat. Reduce heat to medium-low. Cover the pan with foil and place a damp towel on top, ensuring it doesn't hang over the pan's sides. Cook for 20 to 25 minutes until the liquid is absorbed, clams and mussels have opened, shrimp turns pink, and rice is cooked.
  • Discard any unopened clams or mussels and top with roasted peppers for a flavorful garnish.
