Colorful autumn veggies roasted to perfection in olive oil, seasoned and golden-brown.
Ingredients:
  • 1 butternut squash - peeled, seeded and cut into 1-inch dice
  • 3 carrots, cut into 1 inch pieces
  • 1 large sweet potato, cut into 1-inch cubes
  • 1 rutabaga, peeled and cut into 1-inch pieces
  • 3 parsnips, peeled and cubed
  • 3 turnips, peeled and cut into 1-inch dice
  • 0.25 cup extra virgin olive oil
  • kosher salt and pepper to taste
Instructions:
  • Preheat the oven to a piping hot 450 degrees F (230 degrees C).
  • In a large mixing bowl, combine butternut squash, carrots, sweet potato, rutabaga, parsnips, and turnips. Drizzle with olive oil and toss to coat. Season generously with kosher salt and pepper. Transfer the vegetables to a deep roasting pan.
  • Roast the vegetables in the preheated oven for about 45 minutes until they are tender and golden brown, remembering to give them a stir halfway through for even cooking.
