Quick and easy Taiwanese chicken dish with a flavorful blend of ingredients. Perfect with rice or noodles for a satisfying meal.
Ingredients:
  • 0.25 cup cornstarch
  • 3 tablespoons rice wine
  • 2 tablespoons soy sauce
  • 0.5 pound skinless, boneless chicken breast, cut into 1-inch pieces
  • 3 tablespoons vegetable oil, divided
  • 2 cloves garlic, minced
  • 2 teaspoons finely chopped fresh ginger root
  • 6 dried red chile peppers
  • 0.25 cup rice wine
  • 0.25 cup soy sauce
  • 0.25 cup white sugar
  • 2 tablespoons water
  • 2 tablespoons vinegar
  • 2 teaspoons Asian (toasted) sesame oil
  • 0.5 cup peanuts
  • 4 green onions, cut into 1-inch pieces
Instructions:
  • Combine 1/4 cup cornstarch, 3 tablespoons rice wine, and 2 tablespoons soy sauce in a bowl, whisk them together. Add chicken, stir well to coat, and let it marinate for 15 minutes.
  • In a large skillet, heat 2 tablespoons of oil until sizzling. Brown the chicken in the hot oil, then transfer to a bowl using a slotted spoon, keeping the flavorful drippings in the skillet.
  • Drizzle the remaining oil into the hot skillet, then add the garlic, ginger, and red chile peppers. Sauté until fragrant for about 1 minute. Add the chicken back to the skillet and cook until almost cooked through, 3 to 5 minutes.
  • Combine 1/4 cup rice wine, 1/4 cup soy sauce, 1/4 cup cornstarch, sugar, water, vinegar, and sesame oil in a bowl. Pour over the chicken mixture and cook until the sauce starts bubbling, about 3 to 5 minutes. Add peanuts and green onion, cook and stir for another minute.
