Quick and easy Taiwanese chicken dish with a flavorful blend of ingredients. Perfect with rice or noodles for a satisfying meal.
Ingredients:
0.25 cupcornstarch
3tablespoons rice wine
2tablespoons soy sauce
0.5 poundskinless, boneless chicken breast, cut into 1-inch pieces
3tablespoons vegetable oil, divided
2clovesgarlic, minced
2teaspoons finely choppedfresh ginger root
6dried red chile peppers
0.25 cuprice wine
0.25 cupsoy sauce
0.25 cupwhite sugar
2tablespoons water
2tablespoons vinegar
2teaspoons Asian (toasted) sesame oil
0.5 cuppeanuts
4green onions, cut into 1-inch pieces
Instructions:
Combine 1/4 cup cornstarch, 3 tablespoons rice wine, and 2 tablespoons soy sauce in a bowl, whisk them together. Add chicken, stir well to coat, and let it marinate for 15 minutes.
In a large skillet, heat 2 tablespoons of oil until sizzling. Brown the chicken in the hot oil, then transfer to a bowl using a slotted spoon, keeping the flavorful drippings in the skillet.
Drizzle the remaining oil into the hot skillet, then add the garlic, ginger, and red chile peppers. Sauté until fragrant for about 1 minute. Add the chicken back to the skillet and cook until almost cooked through, 3 to 5 minutes.
Combine 1/4 cup rice wine, 1/4 cup soy sauce, 1/4 cup cornstarch, sugar, water, vinegar, and sesame oil in a bowl. Pour over the chicken mixture and cook until the sauce starts bubbling, about 3 to 5 minutes. Add peanuts and green onion, cook and stir for another minute.
