Semifreddo Christmas puddings

Create stunning ice cream desserts with chocolate chips, cranberries, and pistachios.
Ingredients:
  • 1L Vanilla Ice-Cream, softened slightly
  • 75g (1/2 cup) dried cranberries, coarsely chopped
  • 75g (1/2 cup) pistachio kernels, coarsely chopped
  • 65g Baking Chips Real Dark Chocolate
  • 1/2 tsp finely grated orange rind
  • 170g white chocolate melts
  • Silver cachous, to serve
Instructions:
  • Grease six 185ml (3/4 cup) pudding molds and line each with plastic wrap, leaving a 5cm overhang on the sides.
  • Combine the ice-cream, cranberries, pistachios, dark chocolate, and orange rind in a large bowl. Mix well, then transfer to prepared moulds and flatten the top. Cover with plastic wrap and foil, then freeze for at least 6 hours until set.
  • Chill plates in the freezer. Allow puddings to sit at room temperature for 2 minutes. Melt white chocolate according to packet instructions. Flip puddings onto chilled plates and drizzle with melted chocolate. Sprinkle with cachous.
