Semla (Swedish Fat Tuesday Buns)

Delicious cardamom-scented sweet buns filled with almond paste and topped with whipped cream, a perfect treat for Fat Tuesday.
Ingredients:
  • 1 cup warm milk (95-100 degrees F)
  • 1 package active dry yeast (2 teaspoons)
  • 1.33 cups all-purpose flour
  • 2 cups all-purpose flour
  • 7 tablespoons unsalted butter, at room temperature
  • 0.66 cup powdered sugar
  • 1 large egg
  • 2.5 teaspoons ground cardamom
  • 1 teaspoon kosher salt
  • 1 teaspoon water
  • 14 ounces almond paste
  • 0.5 cup powdered sugar
  • 0.33 cup milk, or as needed to achieve desired texture
  • 1 teaspoon ground cardamom, or to taste
  • 1.5 cups heavy cream, whipped
  • 2 tablespoons powdered sugar for dusting
Instructions:
  • In the stand mixer bowl, combine milk, yeast, and 1 1/3 cups flour. Mix gently with a wooden spoon until combined. Let it sit until foamy, approximately 20 minutes.
  • Combine flour, softened butter, powdered sugar, egg, cardamom, and salt in a mixing bowl. Knead the ingredients with a dough hook or by hand until a soft, smooth, elastic dough forms in 5 to 6 minutes. Transfer the dough to a lightly floured surface, shape it into a ball, and divide it into 12 equal portions. Roll each portion under a cupped hand to form perfectly smooth balls, using flour as needed.
  • Arrange dough balls on a parchment-lined baking sheet, ensuring they are evenly spaced. Gently press down on each ball. Sprinkle the tops with flour and cover with a clean kitchen towel. Allow them to rise in a warm spot until doubled in size, approximately 2 hours.
  • Preheat your oven to 425 degrees F (220 degrees C) to get it nice and hot for your recipe.
  • Combine the egg and water in a small bowl, then brush the rolls all over with the egg wash.
  • Bake in the preheated oven for about 12 minutes or until lightly golden. Then transfer the buns to a wire rack to cool completely.
  • In a food processor, blend together almond paste, powdered sugar, milk, and cardamom until the almond filling is smooth.
  • Cut a small triangle from the bun tops, remove some crumbs. Fill with almond filling, add whipped cream, place cut triangle back on top, dust with powdered sugar before serving.
