Light Lebanese cake made with semolina and flour, topped with pine nuts - not too sweet.
Ingredients:
  • 1.5 cups semolina flour
  • 0.5 cup all-purpose flour
  • 1 teaspoon ground turmeric
  • 1.5 teaspoons baking powder
  • 1.125 cups white sugar
  • 1 cup milk
  • 1 tablespoon pine nuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch round baking pan.
  • Combine semolina, flour, turmeric, and baking powder in a small bowl and set aside.
  • Combine milk and sugar in a large bowl until sugar is fully dissolved. Mix in flour mixture and oil, then beat with an electric beater on medium speed for 5 minutes. It's crucial to follow this step precisely, avoid taking any shortcuts.
  • Pour the mixture into a prepared 9-inch round pan and generously sprinkle the top with pine nuts.
  • Bake until a wooden pick inserted in the center comes out dry, about 25-35 minutes in the preheated oven.
