Indulge in this zesty Shaker lemon pie, bursting with bold flavors from the rind and fruit.
Ingredients:
  • 2 cups white sugar
  • 2 lemons, thinly sliced
  • 4 eggs, beaten
  • 1 recipe pastry for a 9 inch double crust pie
  • 1 tablespoon milk
Instructions:
  • Incorporate sugar and sliced lemons in a spacious bowl. Allow to sit for a minimum of 4 hours or overnight.
  • Preheat the oven to 450 degrees F (230 degrees C). Gently mold one pie pastry into a pie plate.
  • Combine beaten eggs with the sugar-lemon mixture until fully mixed. Pour the mixture into the bottom crust, top with the remaining pie pastry. Brush the top crust with milk and sprinkle with sugar to taste.
  • Continue baking in the preheated oven for 15 minutes. Then, lower the heat to 375 degrees F (190 degrees C) and bake for an additional 20-25 minutes, or until a knife inserted into the center comes out clean.
