Crispy chicken with a refreshing dressing for a delightful meal.
Ingredients:
  • 60ml (1/4 cup) light soy sauce
  • 20.00 ml apple cider vinegar
  • 20.00 gm caster sugar
  • 1 long fresh red chilli, thinly sliced
  • 2 tsp finely shredded fresh ginger
  • 50g (1/3 cup) plain flour
  • 1 tsp ground white pepper
  • 1kg chicken wingettes
  • Peanut oil, to deep-fry
  • Sea salt flakes, to serve
  • Fresh coriander sprigs, to serve
Instructions:
  • In a screw-top jar, mix soy sauce, vinegar, sugar, chili, and ginger. Shake well to combine, then refrigerate for 2 hours to enhance the flavors.
  • In a large bowl, mix together flour and pepper. Season with salt, then add the chicken and toss until well coated. Shake off any excess flour.
  • Fill the wok with oil to a depth of 10cm and heat over medium-high heat to 180°C (test the oil readiness by making sure a cube of bread turns golden brown in 15 seconds). Cook chicken in batches for 10-12 minutes, flipping occasionally, until golden and fully cooked. Drain on a paper towel-lined plate.
  • Prepare a beautiful platter and lay the chicken pieces on top. Season them with a sprinkle of sea salt and a generous topping of fresh coriander leaves. Give the dressing a good shake and drizzle it over the chicken, ensuring every piece is coated evenly.
