Russian apple cake batter for various desserts: pie, loaf cake, mini loaves, cupcakes.
Ingredients:
  • 2 Granny Smith apples - peeled, cored, and chopped
  • 5 eggs
  • 1 cup all-purpose flour
  • 0.25 cup sour cream
  • 0.5 teaspoon baking powder
Instructions:
  • Preheat the oven to 350°F (175°C) while you generously grease a large glass pie dish. Arrange the apples inside the dish.
  • In the stand mixer bowl with the wire whisk attachment, beat eggs and sugar on high speed until foamy and lightened in color, about 5 to 7 minutes. Aim for a meringue-like consistency.
  • Stop the stand mixer and swap the attachment to the standard mixing paddle. On low speed, incorporate flour, sour cream, salt, baking powder, and vanilla extract. Mix until just combined. The batter should be thick, fluffy, and airy. Avoid overmixing to maintain the batter's volume. Pour the batter over the apples in the pie dish.
  • Bake in the preheated oven for about 40 minutes until the top is golden brown and a knife comes out clean. Allow to cool briefly for safe handling, then loosen edges and flip the cake onto a serving platter.
