Quick and easy sheet pan chicken fajitas with tender chicken, colorful bell peppers, onions, and flavorful seasonings. Perfect for busy nights!
Ingredients:
  • 0.33333334326744 cup vegetable oil
  • 2 teaspoons chili powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
  • 1 pinch ground cayenne pepper
  • 1.5 pounds chicken tenders, quartered
  • 4 cups sliced bell peppers, any color
  • 1 onion, sliced
  • 0.25 cup chopped fresh cilantro
  • 0.5 lime, juiced
Instructions:
  • Prepare all the necessary ingredients.
  • In a large resealable plastic bag, mix oil, chili powder, oregano, garlic powder, onion powder, cumin, salt, black pepper, and cayenne pepper. Add chicken tenders, bell peppers, and onion. Seal the bag and shake to combine. Refrigerate and marinate for 30 minutes to 2 hours.
  • Preheat your oven to 400°F (200°C) and line a rimmed sheet pan with aluminum foil.
  • Evenly coat the pan with the flavorful chicken mixture.
  • Roast in the preheated oven, giving it a stir halfway through, until the chicken is fully cooked and the bell peppers are tender, about 15-20 minutes. Ensure the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C) using an instant-read thermometer.
  • Drizzle lime juice over the chicken mix and garnish with fresh cilantro; gently mix to combine evenly.
