Indulgent peach cobbler with pecans, baked in cast iron for a crisp, buttery crust. Pair with praline ice cream for a decadent dessert.
Ingredients:
  • 3 cups sliced fresh peaches
  • 2 teaspoons lemon juice
  • 1.5 cups white sugar
  • 1 cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 1.5 cups self-rising flour, or as needed
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 0.25 cup butter, melted
  • 2 tablespoons butter, cut into small pieces
  • 1 tablespoon raw sugar, or as desired
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine peaches with lemon juice to keep them fresh. Add the peaches to a cast iron skillet along with white sugar, pecans, and cinnamon. Simmer gently, stirring frequently, until bubbly.
  • Combine self-rising flour, 1/2 cup white sugar, brown sugar, and 1 teaspoon cinnamon in a bowl, whisk well. Add melted butter until the mixture resembles cooked oatmeal. Spoon over hot peach filling in the skillet, dot with 2 tablespoons of butter pieces and sprinkle with raw sugar.
  • Bake the cobbler in the oven until the topping turns a beautiful golden brown, approximately 30 minutes.
