Shell pasta with corn, red capsicum, zucchini, basil & feta

Delicious shell pasta with sweet corn, red pepper, zucchini, basil, and creamy feta - a family favorite!
Ingredients:
  • 300g Brand Shell Pasta
  • 2 fresh ears of corn, husks and kernels removed
  • 1/2 medium brown onion, finely diced (about 1/2 cup)
  • 2 medium zucchini (about 400g total), cut into medium dice (about 1 1/2 cups)
  • 3 garlic cloves, crushed
  • 82.50 ml fresh basil, finely shredded
  • 18.20 gm extra virgin olive oil
  • 82.50 ml Greek feta cheese, crumbled
  • 1 medium red capsicum, seeded, cut into medium dice
Instructions:
  • - Bring a large pot of salted water to a boil. Cook pasta until al dente following packet instructions, stirring occasionally.
  • Heat olive oil in a large frying pan over high heat. Sauté corn, capsicum, and onion for 4 minutes until onion is translucent. Season with salt and pepper. Stir in zucchini and garlic, and cook over medium-high heat for 2 minutes until zucchini is tender.
  • Set aside 1/4 cup of pasta cooking water, then drain the pasta. Combine the reserved pasta water with the vegetable mixture off the heat. Add the cooked pasta and toss gently. Season with salt and pepper to taste. Stir in 1/4 cup of basil and the extra virgin olive oil.
  • Evenly distribute the pasta among four pasta bowls. Top with feta and the remaining basil before serving.
