Savor a delectable seafood platter with zesty mignonette sauce.
Ingredients:
  • 24 cooked small Balmain bugs or 12 Moreton Bay bugs
  • crushed ice
  • 36 shucked Sydney rock oysters or other small oysters
  • 36 cooked king prawns
  • Lemon wedges, to serve
  • Sliced rye bread, to serve
  • Butter, to serve
Instructions:
  • Place 1 lobster, hard shell down, on a cutting board. Use the tip of a knife to separate the head from the body. Cut through the center from tail to top, gently open it up, and remove the intestinal tract. Repeat with the rest of the lobsters.
  • Prepare a stunning seafood display by topping 2 large platters with ice. Artfully arrange bugs, oysters, and prawns on top. Offer lemon wedges, bread, butter, lime mayonnaise, and mignonette sauce on the side. Place bowls for shells and bowls of warm water with lemon for guests to clean their hands on the table.
