Hearty beef stew topped with creamy mashed potatoes, baked until bubbly. Quick shepherd's pie ready in under an hour for a cozy weeknight meal.
Ingredients:
  • 1/4 teaspoon pepper
  • 1 teaspoon olive oil
  • 1 small onion, finely chopped (1/3 cup)
  • 1 1/2 lb ground beef sirloin
  • 2 cups frozen mixed vegetables (from 12-oz bag)
  • 3 tablespoons tomato paste
  • 1/2 teaspoon salt
  • 1 3/4 cups Progresso™ beef-flavored broth (from 32-oz carton)
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 package (20 oz) refrigerated mashed potatoes
Instructions:
  • Preheat oven to 375°F and generously coat a 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In a large skillet, heat oil over medium-high heat. Saute onion for 5 minutes, stirring occasionally, until soft. Add beef and cook for 5 to 7 minutes, stirring occasionally, until fully cooked. Drain excess fat.
  • Combine a colorful assortment of mixed vegetables with rich tomato paste, a sprinkle of salt, and a dash of pepper. Cook over medium heat for 5 minutes, stirring often until the vegetables are heated through.
  • Cook the beef in a skillet for 5 to 7 minutes, stirring occasionally, until fully cooked. Drain any excess fat.
  • In a small bowl, gently whisk together the broth and flour until smooth. Pour the broth mixture into the beef mixture. Bring to a boil and cook for 3 minutes, stirring continuously, until the sauce thickens. Transfer the beef mixture into a baking dish.
  • Smooth a layer of creamy mashed potatoes over the savory beef mixture.
  • Bake until beautifully golden for about 20 minutes.
