Quick and convenient casserole with seasoned ground beef, frozen veggies, and mashed potato topping.
Ingredients:
  • 7 potatoes, peeled and cubed
  • 1 pound ground round
  • 1 cup water
  • 2 cubes beef bouillon
  • 1 cube chicken bouillon
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon steak seasoning
  • 1 tablespoon dried minced onion flakes
  • 1.5 cups frozen mixed vegetables
Instructions:
  • Bring a large pot of salted water to a boil. Cook potatoes until tender, about 15 minutes. Drain, cool, and mash.
  • Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  • In a large heavy skillet, brown the meat on all sides, stirring occasionally. Drain excess fat and return meat to pan over medium heat. Add water and season with beef and chicken bouillon, rosemary, salt, pepper, steak seasoning, and onion flakes. Mix in frozen vegetables and cook until most of the liquid evaporates, stirring occasionally.
  • Transfer the meat mixture into a 2 quart casserole dish and top it with mashed potatoes. Bake in a preheated oven for 20 to 30 minutes, until the top is golden brown.
