Sherbies no-bake slice recipe

Indulge in a tantalizing no-bake slice with a buttery biscuit base, creamy Sherbies cheesecake layer, and zesty orange jelly topping.
Ingredients:
  • 250g Granita biscuits
  • 100g butter, melted, cooled
  • 300ml thickened cream
  • 20 Sherbies lollies
  • 6.00 gm gelatine powder
  • 500g cream cheese, chopped, at room temperature
  • 85g Original Orange jelly crystals
  • 250ml (1 cup) boiling water
  • 100ml chilled water
Instructions:
  • Prepare a 20 x 30cm slice pan by greasing it and lining it with baking paper, leaving enough to overhang on the sides.
  • Crush the biscuits in a food processor and mix in melted butter until combined. Press the mixture firmly into the pan using a spoon. Chill in the fridge until firm, about 30 minutes.
  • In a heatproof bowl set over simmering water, combine the cream and Sherbies, making sure the bowl doesn't touch the water. Stir frequently for 10 minutes until the Sherbies have melted completely. Transfer the mixture to a separate bowl and chill in the fridge, stirring occasionally, for 20 minutes until it reaches room temperature.
  • In a small microwave-safe bowl, add 2 tablespoons of water and sprinkle the gelatine over it. Allow it to soften for 2-3 minutes. Microwave for 20 seconds on HIGH until hot. Whisk with a fork until the gelatine is fully dissolved.
  • In a large bowl, use electric beaters to blend cream cheese and sugar until smooth. Incorporate the cooled cream mixture and gelatine mixture until well combined. Pour over the biscuit base and refrigerate for at least 3 hours until set.
  • In a heatproof bowl, mix jelly crystals with boiling water until fully dissolved. Stir in cold water and let it cool for 30 minutes until slightly thickened. Gently pour the jelly mixture over the slice and chill in the fridge for 2 hours until firm. Cut into squares before serving.
