Festive chocolate peppermint biscotti dipped in white candy and crushed candy canes - a perfect holiday gift!
Ingredients:
  • 2 cups white sugar
  • 1 cup butter, softened
  • 1 cup unsweetened cocoa powder
  • 0.33333334326744 cup chocolate liqueur (such as Godiva®)
  • 2 teaspoons peppermint extract
  • 4.5 cups all-purpose flour
  • 4 teaspoons baking powder
  • 0.75 teaspoon salt
  • 1.6666667461395 cups mint chocolate chips (such as Hershey's®)
  • 2 (14 ounce) packages white candy melts (confectioners' coating)
  • 6 large peppermint candy canes, crushed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare two baking sheets by lining them with parchment paper.
  • Using an electric mixer, combine white sugar, butter, and cocoa powder in a large bowl until smooth and creamy. Add eggs one by one, beating thoroughly after each addition. Stir in chocolate liqueur and peppermint extract until well incorporated.
  • In a separate bowl, mix together flour, baking powder, and salt. Gradually add this mixture to the sugar-egg mixture until fully combined, then gently fold in the mint chocolate chips.
  • Divide dough into 4 equal parts and shape them into logs, then place them on the baking sheets.
  • Smooth the surface of the logs by dipping a spatula in water and running it lightly over the top.
  • Bake the biscotti logs in the preheated oven for 30 to 35 minutes until firm. Cool completely on wire racks.
  • Lower the oven temperature to 300°F (150°C).
  • Slice biscotti logs into 3/4-inch thick pieces and place them elegantly on baking sheets.
  • Bake the biscotti in the oven until dry, about 10 minutes on each side. Allow them to cool completely on wire racks.
  • Melt candy melts in a wide microwave-safe bowl for about 2 1/2 minutes, stirring every 30 seconds until smooth.
  • Dip the cooled biscotti into the melted white candy, then sprinkle with crushed candy canes for a festive touch.
